We went to Hermigua to meet Rayco Herrera and discover his little factory of artisan “gofio” (a kind of sweet Canary Island flour, added to many foods), which has won no more and no less than 19 awards in the past three years. This means that we can say he probably produces the best “gofio” in the archipelago. It is worth visiting and getting to know his little factory and the love that goes into the production.
It made me think of when I was small and my grandmother would make me “gofio” with milk and cinnamon. When I thought of that, I decided that, as soon as I got home, I was going to make myself some with the Gofio Gomero that I had had the chance to try and which—by the way—was fabulous.
