La Palma is an island full of traditions and, above all, lots of secrets. Our biggest surprise was discovering the little mysteries of a majestic factory from the 1930s that produces—and has done since those times—one of the best rums on the island, made using sugar cane.
What strikes you most is the smell at the factory: it's like being inside a bag of sugar and wine. The fermentation, the cellars and, lastly, a tasty swig of one of the most aromatic rums I have every tried all transport you back to the 1930s and a tradition that is still very much alive.
